Alex Page's Grilled Hawaiian Flatbread

Serves 4

 

Ingredients:

1 pineapple, peeled and cut into 1 inch rings

1 12inch, store bought flatbread

1 tbsp extra virgin olive oil

1 cup pizza sauce

 170g fresh mozzarella

100g thinly sliced prosciutto

1 jalapeño, thinly sliced

1 cup baby arugula

 

Directions:

  1. Preheat two burners on your grill to high heat. Place pineapple rings directly on the grill over the lit burners and cook for 3-4 minutes per side, or until slightly charred and softened. Remove and cool. Once cool, cut into chunks.
  2. Brush both sides of the flatbread lightly with olive oil and place directly on the grill over the lit burners and cook for 2-3 minutes per side, or until slightly charred and warmed through.
  3. Remove the flatbread to the indirect side of the grill, over the burners that are not lit. Top with pizza sauce, mozzarella and pineapple chunks. Close grill and cook for 5-8 minutes, or until cheese is melted and bubbling and dough is completely warmed through. Remove to a serving plate.
  4. Top hot flatbread with prosciutto, jalapeño and arugula. Slice and serve immediately.
