Serves 4
Ingredients:
1 pineapple, peeled and cut into 1 inch rings
1 12inch, store bought flatbread
1 tbsp extra virgin olive oil
1 cup pizza sauce
170g fresh mozzarella
100g thinly sliced prosciutto
1 jalapeño, thinly sliced
1 cup baby arugula
Directions:
- Preheat two burners on your grill to high heat. Place pineapple rings directly on the grill over the lit burners and cook for 3-4 minutes per side, or until slightly charred and softened. Remove and cool. Once cool, cut into chunks.
- Brush both sides of the flatbread lightly with olive oil and place directly on the grill over the lit burners and cook for 2-3 minutes per side, or until slightly charred and warmed through.
- Remove the flatbread to the indirect side of the grill, over the burners that are not lit. Top with pizza sauce, mozzarella and pineapple chunks. Close grill and cook for 5-8 minutes, or until cheese is melted and bubbling and dough is completely warmed through. Remove to a serving plate.
- Top hot flatbread with prosciutto, jalapeño and arugula. Slice and serve immediately.
