Andrea Buckett's Campfire Skillet Gnocchi

Serves 4

Ingredients: 

300g hot Italian sausage (casings removed)

2 cloves garlic, smashed

454g shelf stable gnocchi

255g cherry tomatoes

1 cup of wine, beer or water

½ cup fresh basil or parsley

 

Before heading out to the campfire

  • Add the sausage meat and garlic to a sealable bag or food container. 
  • Everything else can be transported in the packaging it comes in.


Directions:

  1. Place a cast iron (or heat safe) skillet over a heat source.  Either a propane burner or a grate set over a low burning campfire. 
  2. Add the sausage and garlic, and cook, stirring often until the sausage is cooked through.
  3. Add the gnocchi and cook, stirring occasionally until it starts to brown.
  4. Add the cherry tomatoes and cook for about 2 minutes.
  5. Pour in the wine and bring to a simmer.  Simmer until the gnocchi is tender and most of the liquid has evaporated.
  6. Tear over the basil leaves and serve.
