Serves 4
Ingredients:
300g hot Italian sausage (casings removed)
2 cloves garlic, smashed
454g shelf stable gnocchi
255g cherry tomatoes
1 cup of wine, beer or water
½ cup fresh basil or parsley
Before heading out to the campfire
- Add the sausage meat and garlic to a sealable bag or food container.
- Everything else can be transported in the packaging it comes in.
Directions:
- Place a cast iron (or heat safe) skillet over a heat source. Either a propane burner or a grate set over a low burning campfire.
- Add the sausage and garlic, and cook, stirring often until the sausage is cooked through.
- Add the gnocchi and cook, stirring occasionally until it starts to brown.
- Add the cherry tomatoes and cook for about 2 minutes.
- Pour in the wine and bring to a simmer. Simmer until the gnocchi is tender and most of the liquid has evaporated.
- Tear over the basil leaves and serve.
