Pretzel Dogs

Makes 6

1 ¼ cups all-purpose flour

1 teaspoon instant yeast

½ teaspoon salt

¼ cup milk, warmed

¼ cup water, warmed

1 tablespoon honey

1 tablespoons butter, melted

6 hot dogs

Sesame seeds

For boiling

6 cups water

6 tablespoons baking soda

1.        In a large bowl, stir together the flour, yeast, and salt. Make a well in the centre and add in the milk, water, honey, and butter. Mix into a shaggy dough then turn the dough out onto a lightly floured work surface and knead for 3 to 5 minutes or until springy and soft, adding more flour if needed. Place the dough into a lightly oiled bowl, cover with a plate or a piece of plastic wrap, and set aside to rise for 1 hour or until doubled in size.

2.        When risen, punch down the dough and turn out onto a lightly floured work surface. Divide the dough into 6 equal pieces. Roll each into a 12-inch rope then wrap tightly around the hot dogs. Set the wrapped hot dogs aside for 15 to 20 minutes while you prepare the water and heat the oven.

3.        Heat your oven to 450ºF and line a sheet pan with parchment paper. Spray the parchment with non-stick cooking spray to avoid any sticking and set aside.

4.        Add the water and baking soda to a large saucepan or sauté pan and bring to a boil over medium-high heat. When boiling and working in two batches, boil the dough-wrapped hot dogs for 1 minute, flipping halfway through. Transfer to the prepared sheet pan and scatter with sesame seeds. Continue with the remaining hot dogs.

5.        Bake the pretzel dogs for 12 to 14 minutes or until golden brown.

6.        Cool slightly and serve with ketchup and mustard.
