Sundried tomato and cheddar dip

This dip is so quick and easy to make in a food processor. Simply throw together some walnuts, roast peppers, sundried tomato, old cheddar shredded cheese, garlic and apple cider vinegar and give it a whirl!

Ingredients

  • 2 cloves garlic, minced
  • 1/2 cup walnut pieces, toasted
  • 1/2 cup soft sun-dried tomatoes
  • 1 tablespoon apple cider vinegar
  • 1/2 cup roast peppers or pimento peppers
  • 1 cup Black Diamond Old Cheddar shredded cheese
  • Salt and pepper, to taste if needed
  • 2 tablespoons green onion, thinly sliced to garnish

Directions

  1. Add the garlic, walnuts, tomatoes and apple cider vinegar to a food processor, and pulse together to make it smooth.  
  2. Add peppers and pulse until they are blended and almost smooth. 
  3. Add in the cheese and pulse until smooth. 
  4. Garnish with green onion and serve with vegetables. Enjoy!
