Shishito peppers with broken Caesar dressing

Forget Caesar salad and spice things up with smokey Shishito peppers and chilli flakes.

Ingredients

Dressing

  • 1/2 cup parmesan cheese, grated
  • 2 tablespoons garlic, grated
  • 2 anchovies, chopped
  • 1/3 cup red wine vinegar
  • 1 teaspoon chilli flakes
  • 1 tablespoon lemon juice
  • 1 cup olive oil

Salad

  • 2 dozen shishito peppers

Directions

  1. Preheat the grill to high heat. 

Dressing 

  1. Place parmesan cheese, garlic, anchovies, red wine vinegar, chilli flakes, lemon juice and olive oil into a bowl and mix well.

Salad 

  1. Place the peppers onto the grill and char and blister.  
  2. Place peppers on a platter and serve with broken Caesar dressing. Enjoy!
