Ingredients
1 sheet store bought puff pastry, thawed
1/4 cup unsalted butter, room temperature
1/4 cup brown sugar
1 egg
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
3/4 cup almond flour
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/2 teaspoon cinnamon
Pinch freshly grated nutmeg, optional
2 pears, thinly sliced
1 tablespoon sugar
2 tablespoons sliced almonds
Directions
Arrange your oven rack to the lowest position and heat it to 400ºF. Line a sheet pan with parchment paper.
Unroll the puff pastry and cut it into six equal rectangles. Place the pastry onto the prepared sheet pan, leaving a few inches between each, and set aside.
In a medium bowl, beat together the butter and brown sugar. Beat in the egg, vanilla, and almond extract until well combined. Add almond flour, all-purpose flour, salt, cinnamon, and nutmeg, and stir well to combine. Divide this almond-filling mixture over the pastry and spread it into an even layer, leaving a small border around the edge.
Fan out the pear slices and layer over the almond filling. Scatter the tops of each pastry with some sugar and scatter over the sliced almonds.
Bake for 18 to 20 minutes or until lightly puffed and golden brown. Allow the tarts to cool slightly or completely before serving. Enjoy!
