Sweet Potato Coconut Mash

Put a twist on your mashed potatoes this holiday season using sweet potatoes and creamy coconut milk.

Ingredients

  • 3 large sweet potatoes, peeled and cut into cubes
  • 1/2 cup coconut milk
  • Salt and black pepper, to taste
  • 1/4 teaspoon ground cinnamon, optional
  • 1/8 teaspoon ground nutmeg, optional
  • Fresh herbs, for garnish, optional

Directions

  1. Place potatoes in a large pot of salted water and bring to a boil, then lower to a simmer. Cook for 15-20 minutes, or until potatoes are fork-tender. 
  2. Drain potatoes into a colander, shaking excess water and return to the pot. Mash the sweet potatoes using a potato masher/ricer or fork until smooth. 
  3. Stir in the coconut milk, cinnamon, nutmeg, salt, and pepper to taste. Mix well to combine all the flavours.
  4. Transfer to a serving dish, add fresh herbs or fresh cracked pepper for garnish and enjoy!
