Ingredients
Salad
- 1 cup quinoa
- 1 cup lite feta, crumbled
- 2 baby cucumbers, chopped
- 1 can chickpeas, rinsed and drained
- 1/3 cup mint, chopped
- 1/3 cup parsley, chopped
- 1/2 red onion, diced
- 1/3 cup walnuts, chopped
Dressing
- 1/2 cup olive oil
- 1 lemon, juiced
- 1 garlic clove, grated
- Salt and black pepper

- Cook quinoa and let fully cook before adding to salad.
Dressing
- Mix together olive oil, lemon juice, garlic, salt, and black pepper and add to a large jar.
