Ingredients
Salad
1 cup quinoa
1 cup lite feta, crumbled
2 baby cucumbers, chopped
1 can chickpeas, rinsed and drained
1/3 cup mint, chopped
1/3 cup parsley, chopped
1/2 red onion, diced
1/3 cup walnuts, chopped
Dressing
1/2 cup olive oil
1 lemon, juiced
1 garlic clove, grated
Salt and black pepper
Directions

Cook quinoa and let fully cook before adding to salad.
Dressing
