Shurbad adas soup

Shurbad adas soup is thick and creamy, mostly served during iftar, and very filling it can stand on its own and is very satisfying any time of the day.

Ingredients

  • 1 cup lentils
  • 1/2 cup oats
  • 6 cups water
  • 1/2 to 1 pound of meat
  • Salt and pepper, to season
  • 1 small onion, chopped
  • 1 garlic, chopped
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander
  • One lemon, cut in half

Directions

  1. In a medium saucepan heat, the oil adds the meat, and brown, add the onion season with salt and pepper cook until the onions are translucent, add the garlic, cumin, and coriander powder, and stir for a few minutes.
  2. Add the oats and water bring it to a boil reduce the heat and simmer while stirring occasionally for about 30 to 40 minutes (Make sure not to burn the soup!).
  3. Using a hand blender or a blender blend the soup until smooth and creamy. Serve with lemon and sprinkle with some sugar and duqus (optional). Enjoy!
