Chickpea salad

A savoury and hearty salad packed with healthy ingredients like chickpeas, bell peppers, and cucumbers. Perfect to pack for on the go. 




  • 1 cup of canned chickpeas
  • 1 bell pepper
  • 1/2 cucumber
  • A handful of olives
  • Handful of thinly sliced red onion
  • Handful of crumbled feta
  • 10 cherry tomatoes
  • Handful of spinach
  • Handful of parsley
  • Chopped walnuts (optional)


  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 lemon, juiced
  • 1 teaspoon smoked paprika
  • Pinch salt and pepper



  1. Start by slicing all bell peppers, cucumbers, tomatoes, and red onions. Slice your spinach and combine.
  2. Drain your can of chickpeas and rinse with water. 


  1. Combine olive oil, balsamic vinegar, lemon juice, smoked paprika, salt, and pepper.  


  1. Layer your salad - start by adding your chickpeas and dressing.
  2. Add your pepper and cucumbers.
  3. Add your olives and red onions.
  4. Add your tomatoes, feta, and walnuts.
  5. Finally, top with your parsley and spinach mix.
  6. TIP: A mason jar salad is all about the layers and the most important rule is to put the “harder” vegetables near the bottom as they marinade in the dressing and the softer vegetables at the top, protecting them from wilting and getting soggy.
  7. Sit in the fridge so chickpeas marinade in the dressing and enjoy!
