A French classic recipe, steamed mussels, and French fries makes an easy, delicious dinner.
3 servings frozen French fries
2 tablespoons butter
2 cloves garlic, roughly chopped
1 shallot, minced
2 sprigs fresh thyme
3/4 cup heavy cream
1 teaspoon hot sauce
1/2 cup frozen peas
2 tins (85g) smoked mussels, drained
1 teaspoon lemon zest
2 tablespoons lemon juice
Flat leaf parsley, for garnish
Preheat the oven according to the directions on the frozen French fries.
Place the French fries on a baking sheet and cook according to the package directions.
In the meantime, place a medium skillet over medium heat. Add the butter, garlic, shallot, and sprigs of thyme. Once the butter is melted, sweat the garlic and shallot for two minutes just until it softens.
Pour in the cream and bring it to a simmer. Simmer gently for about four minutes. Stir in the hot sauce, frozen peas, and mussels. Continue to simmer until the peas and mussels are warmed through and the cream has thickened slightly. Stir in the lemon zest, and juice. Taste and readjust for seasoning.
Place a serving of fried on a plate and spoon over a portion of the creamy garlic mussels. Garnish with parsley. Enjoy!
