Easy Red Velvet Cookies

Who doesn't love red velvet cake? These cookies take the heavenly flavours of this iconic cake and turn them up a notch — with little baking time to save more time for snacking!

Ingredients
- 15 oz box Red Velvet cake mix (or White Cake mix)
- 1/3 cup vegetable oil
- 2 large eggs
- 1 cup white chocolate chips
- 1/4 cup mini semi-sweet chocolate chips
- Red food coloring gel (if using white cake mix)
Directions
- Preheat oven to 350F degrees. Line two baking sheets with parchment paper and set aside until needed.
- In a large bowl, combine cake mix, oil and eggs. Mix until well combined and uniform in colour. The batter will be pretty stiff.
- Stir in both types of chocolate chips.
- Lightly spray a one-and-a-half to two tablespoon cookie scoop with cooking spray. Scoop batter onto prepared baking sheets, about two to three inches apart- they will spread out.
- Bake for 11 to 12 minutes. Cookies will look soft and slightly underdone in the center when you take them out; they’ll keep cooking on the baking sheet.
- Let them cool on baking sheets for 5 minutes, then remove them to a cooling rack to cool completely. Enjoy!
