Easter Nests with Ricotta and Blue Cheese filling
Ingredients
Nest
- 500g Kataifi Dough
- 5 Tbsp Melted Butter
Cheese Filling
- 200g Whipped Ricotta
- 50g Roquefort Blue Cheese
Orange Blossom Burnt Honey
- 100g Honey
- 1 tbsp Orange Blossom Water
Garnish
- Rosemary Sprigs
- Figs
- Icing Sugar
Directions
Nests
- Separate the Kataifi dough into strands and toss with melted butter.
- Divide into 10 portions and bundle together into a nest like shape. Using your thumb push down the middle of the nest so that it has a cavity.
- Bake at 325F x 12-15min until golden brown. Let cool.
Cheese Filling
- Place ricotta and roquefort into a food processor or stand mixer and beat until fluffy. Fill this mixture into a pastry bag and set aside.
- Pipe roughly 25g of cheese filling into the cavity of the nest.
Orange Blossom Burnt Honey
- Place honey into a pot and cook over medium high heat until it slightly darkens in colour.
- Remove from heat and add the orange blossom water. Let cool before using.

- Figs
- Icing Sugar
Assembly
- Take each cheese-filled nest and place half a fig sliced lengthwise on top.
- Drizzle with the Orange blossom Honey and finish the garnish with a piece of rosemary sprig and a dusting of icing sugar.
