1 jar (500 millilitres) of whole cherries in a syrup
¼ cup sugar
2 tablespoons cornstarch
Whipped cream
2 cups 35% whipping cream, very cold
½ cup powdered sugar
1 tablespoon vanilla extract
1 ounce of unsweetened chocolate to make chocolate curls with (you can do this by using a vegetable peeler)
Directions
Brownie
Pre-heat the oven to 350 degrees Fahrenheit. Line and grease a nine by 13 pan.
In a bowl combine the eggs, butter, sugar and vanilla. Using a hand mixer, mix on high. In a separate bowl sift the flour, cocoa powder, baking powder and salt.
Add the dry ingredients into the wet ingredients and combine until smooth with the hand mixer. Using a spatula, fold in the chocolate chips and add the batter into the prepared pan.
Bake for 20-25 minutes. Remove from the oven and cool. Then cut into squares.
Cherries
Separate the whole cherries and the syrup that they are in. Place the syrup into a saucepan and add in the sugar and cornstarch and whisk off the heat to combine.
Place the saucepan on medium high heat and allow it to thicken about three to five minutes.
Remove off the heat add in the cherries and allow the mixture to cool.
Whipped Cream
In a large bowl add in the whipped cream, powdered sugar and the vanilla.
Whip on high using a hand blender until the cream forms stiff peaks. Reserve in the fridge until assembly.
Assembly
Place each individual brownie on a dish.
Add a dollop of whipped cream and then top with cherries and some syrup. Garnish with chocolate curls and enjoy!
