Blackberry, peach and goat cheese crumble

Ingredients

  • 1/2 cup all purpose flour
  • 1 cup rolled oats
  • 1/2 cup pecans, chopped
  • 1/2 cup sunflower seeds
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cubed
  • 3 cups blackberries
  • 5 peaches, sliced
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon salt
  • 1 lemon, juiced and zested
  • 1 teaspoon vanilla extract
  • 1 cup goat cheese
  • 1 tablespoon honey

Directions

  1. Pre-heat bbq to 350° by turning on one side of the grill to medium high and line a baking sheet with foil.
  2. In a medium size mixing bowl toss together flour, oats, pecans, sunflower seeds, brown sugar and salt. Add cubed butter and using your fingertips work it into the flour mixture. Set aside.
  3. To a large mixing bowl add blackberries, peaches, sugar, cornstarch, salt, lemon juice and zest and vanilla extract. Mix well.
  4. Add fruit mixture to a large cast iron pan. Dot the fruit mixture with goat cheese and drizzle with honey. Top with crumble.
  5. Place cast iron on prepared baking sheet and into the bbq, on the side that the heat is not on.
  6. Cook, covered for one hour.
  7. Serve with vanilla ice cream.
