Blackberry, peach and goat cheese crumble
Ingredients
- 1/2 cup all purpose flour
- 1 cup rolled oats
- 1/2 cup pecans, chopped
- 1/2 cup sunflower seeds
- 1/2 cup brown sugar
- 1/2 teaspoon salt
- 1 cup unsalted butter, cubed
- 3 cups blackberries
- 5 peaches, sliced
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1 teaspoon salt
- 1 lemon, juiced and zested
- 1 teaspoon vanilla extract
- 1 cup goat cheese
- 1 tablespoon honey
Directions
- Pre-heat bbq to 350° by turning on one side of the grill to medium high and line a baking sheet with foil.
- In a medium size mixing bowl toss together flour, oats, pecans, sunflower seeds, brown sugar and salt. Add cubed butter and using your fingertips work it into the flour mixture. Set aside.
- To a large mixing bowl add blackberries, peaches, sugar, cornstarch, salt, lemon juice and zest and vanilla extract. Mix well.
- Add fruit mixture to a large cast iron pan. Dot the fruit mixture with goat cheese and drizzle with honey. Top with crumble.
- Place cast iron on prepared baking sheet and into the bbq, on the side that the heat is not on.
- Cook, covered for one hour.
- Serve with vanilla ice cream.
