Cookie crumble topping

This is a must have for summer entertaining- a cookie crumble that can be used on top of fresh fruits, ice creams, cakes or on top of grilled fruits..

Ingredients

  • 1-1/2 cups all purpose flour
  • 3/4 brown sugar, preferably coconut sugar
  • 1/3 cups granulated sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 cup of chopped toasted nuts (Walnuts, pecans, almonds)
  • 1/4 cup rolled oats
  • 1 stick, 1/2 cup, chilled unsalted butter, cut into 1/2 inch cubes. Alternatively you can melt the butter.

Directions

  1. In order to successfully bake on the gas BBQ you’ll need a few things: An oven thermometer, a cookie sheet that you don’t mind placing over direct heat on the bbq, a baker’s cooling rack and a timer. The BBQ you use is also important. It should be big enough to allow air to circulate and have at least three burners that you can easily temperature control. Wait until you are ready to bake before you place the baking rack down on the grill to create indirect heat. If you don’t have a BBQ you can easily make this recipe in a home oven!
  2. Preheat your BBQ to 350 F. In order to get to the right temperature, set your BBQ to medium high until it reaches about 400 F and then turn off the middle burner or middle two burners and check every five minutes until you get to approximately your desired temperature. This should take about 15 minutes and once you understand your BBQ’s temperature you’ll be able to reach the right temperature more easily the next time.
  3. Prepare a baking sheet with parchment and set aside.
  4. While the BBQ is preheating, mix all the dry ingredients together in a large bowl. Add in the butter and work it through the mixture with your hands until it starts to all crumble together. Alternatively you can melt the butter and pour it into the mixture- A slightly different baked texture will result!
  5. Transfer the mixture to the baking sheet and make sure to pinch together any loose bits to create some nice big crumbles. Set your BBQ baking sheet and the cooling rack in the center of the BBQ quickly so as to not lose any heat. Put the baking sheet of cookie crumble onto the rack and bake for about 15 minutes or until the crumble is lightly browned and crisp to the touch. Add on five minutes if the crumbs aren’t baked fully or bake slightly longer until the crumbs are fully crisp.
  6. Store in an airtight container for up to three weeks, or freeze, and use on everything for a summer of simple but fun desserts!
