Crispy prosciutto, burrata, peach and tomato salad

This dish will become your new go-to summer salad in no time! Made with ripe heirloom tomatoes, white peaches and crispy prosciutto, this refreshing salad is packed with flavour. It's perfect for your next backyard get-together, lunch with friends or as a simple meal for one!

Ingredients

Crispy Prosciutto

  • 5-6 pieces prosciutto

Peach and Tomato Salad

  • 2 heirloom tomatoes
  • 1 teaspoon salt
  • 2 white peaches

To Serve

  • 1 burrata
  • Drizzle of olive oil
  • 1 teaspoon black pepper
  • 2-3 basil leaves

Directions

For the Crispy Prosciutto

  1. Preheat oven to 350°F and line a baking sheet with parchment paper. Place prosciutto on the baking sheet and bake for 13-14 minutes until prosciutto is crispy.

Build the Rest of the Salad

  1. Add tomatoes to a bowl and add salt. Then add the peaches and set them aside.  
  2. Remove prosciutto from the oven and once cooled, break each piece in half and add to salad.

To Serve

  1. Place the room temperature burrata in a bowl and cut open. Scoop Burrata on top of tomatoes.
  2. Drizzle olive oil all over and top with black pepper and basil. Serve and enjoy!
