Fig n' whisky cocktail

This has all the components of romance: figs, honey, rosemary…. all ingredients to lean on when looking for love. The simple syrup could seem complicated to the uninitiated, but it’s actually really easy and definitely worth it. I love how the spicy whisky frames the deep raisin flavours of the fig syrup. 

Ingredients

  • 2 ounces whisky
  • 1-1/2 ounce fig syrup*
  • 1/2 ounce fresh lemon juice
  • 1 egg white (or 1 ounce aquafaba), optional
  • Rosemary stem, for garnish
  • Fig slice, for garnish

Directions

  1. In an empty shaker pour in all ingredients and shake vigorously for 20 seconds or so. Add in ice and re-shake. Strain into a rocks glass with a king cube or filled with ice and garnish with a rosemary stem and slice of fig.
  2. *Fig syrup: In a saucepan add one cup each of water, honey and dried figs (about 12 figs in total). Gently warm over medium heat until honey is dissolved and simmer for about 10-15 minutes to allow flavours to come together. Turn off heat and allow to cool on the stove top (the colour of the liquid will be a stunning ruby red and you can stop here if you want, but the fig flavour will not be that strong).  Strain liquid into a high-speed blender and add about four of the figs (reserve remaining figs for another use). Puree together for a more intense fig flavour. Strain through a fine mesh sieve into a clean container and store in the fridge for up to a week.
