Grilled pork tenderloin with roasted apple sauce

Shahir Massoud uses seasonal ingredients for a delicious grilled pork tenderloin served with roasted apple sauce, making it a perfect weeknight meal.

Ingredients

Grilled Pork Tenderloin

  • 1 pork tenderloin
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Directions

For the Roasted Apple Sauce

  1. In a large mixing bowl, toss the apples with the cinnamon, ginger, and cardamom.
  2. Then in a large saucepan, heat the olive oil over medium high then add the apples.  Sear for 2 minutes, turning the apples to cover all sides.
  3. Then add the calvados (carefully near the open flame!) and allow to reduce, burning off the alcohol. 
  4. Add the stock, sugar, and vinegar and bring up to a gentle boil. 
  5. Reduce to a low simmer, add the bunch of sage, then transfer to the oven and roast for 15 - 20 minutes.
  6. Remove from the oven then swirl in the cream to finish off the sauce. Set aside for serving. 

For the Pork Tenderloin 

  1. Preheat your oven to 400 degrees. Season the pork with salt and pepper. 
  2. In a large saucepan, heat the oil over medium high, then sear the pork on all sides, about 3-4 minutes total. 
  3. Transfer to the oven and roast for 18- 20 minutes (for a trace of pink) or 30 minutes for cooked all the way through.
  4. Remove, rest for 5 minutes, then slice into 1/2" slices.  

To Serve 

  1. Spoon roasted apple sauce onto slices of roasted pork tenderloin and garnish with extra sage leaves.
