Mast o Khiar


  • 1 teaspoon salt
  • 3 cups of strained yoghurt
  • 2 Persian cucumbers
  • 1/4 cup walnut
  • 1/4 cup green Persian raisins
  • 1/4 cup mint
  • 1 teaspoon damask rose
  • 1/4 cup chopped scallions


  1. Add yoghurt to a mixing bowl.
  2. Dice cucumber and add to yoghurt.
  3. Add 1/4 cup mint.
  4. Add 1/4 cup damask rose.
  5. Chop scallions and add to the yoghurt.
  6. Mix the ingredients in the bowl.
  7. Roughly chop walnuts.
  8. Top the yoghurt mixture off with walnuts and raisins.
  9. Serve with crusty bread.
