Minestrone soup

Use your multicooker on a cold day to create this soup in a flash.

Ingredients
- Olive oil
- 2 large carrots, diced
- 4 ribs celery diced
- 4 cloves garlic, smashed
- 1 sweet onion, diced
- 4 cups vegetable stock
- 1 can whole tomatoes
- 1 large sweet potato, peeled and diced
- 1 can navy beans, drained and rinsed
- 1/4 cup elbow macaroni
- 1 sprig thyme
- 2 bay leaves
- 1 tablespoon each basil and parsley, chopped
- 1 teaspoon hot chilies in oil
Directions
- In the multi cooker press the soup button.
- Add olive oil, carrots, celery, garlic and onion.
- Cook until soft.
- Add the vegetable stock.
- Add the tomatoes, sweet potato, noodles beans thyme, and bay leaves.
- Simmer until sweet potatoes are cooked through, and the pasta is soft.
- Garnish with fresh herbs and olive oil. Serve and enjoy!
