Ingredients
1/4 cup maple syrup
2 tablespoons reduced sodium soy sauce
2 tablespoons hot water
2 tablespoons white miso
4 x 85-110 gram salmon fillets
2 cups broccoli florets
1 carrot, peeled and sliced on a bias
1 red bell pepper, thinly sliced
1 cup edamame (shelled)
Garnish:
Cooked brown rice
Toasted sesame seeds
Green onions, thinly sliced
Directions
Preheat oven to 425 F
Mix together the maple, soy, hot water and miso.
Arrange the salmon and veggies onto a baking sheet and brush with the glaze.
Bake for about 15-18 minutes or until salmon is no longer opaque. Serve with brown rice, if desired and garnish with sesame seeds and green onions.
