One Dish Wonder: Jamie Oliver's Chicken And Chorizo Bake

Both types of potatoes, plus the peppers means this dish is a jam-packed with vitamin C; a nutrient our body use for everything from keeping our teeth and skin healthy to protecting our cells.

Ingredients

  • 70 grams quality chorizo
  • 2 cloves of garlic
  • 1 chicken bouillon cube
  • 1 sprig of fresh rosemary
  • 2 tablespoon sherry vinegar
  • 4 chicken thighs, skin on, bone in
  • 2 small sweet potatoes
  • 2 baking potatoes
  • 2 red onions
  • 2 mixed-color peppers
  • 1 bunch of fresh Italian parsley (1oz)
  • 4 tablespoons plain yogurt
  • Cayenne pepper
  • 1 fresh red chile
  • 2 tablespoons whole almonds
  • 1 lemon

Directions

  1. Preheat the oven to 400F.
  2. Chop the chorizo, peel the garlic, and place both in a blender.
  3. Crumble in the bouillon cube, strip in the rosemary leaves, add the vinegar, then cover with 1 1/4 cups of boiling water. Put the lid on securely, cover with a kitchen towel, and holding it in the place, blitz until smooth.
  4. Pull the skin off the chicken and discard, then place all the thighs in a large roasting pan (16 x 12 inches).
  5. Wash all the potatoes (leaving the skins on for extra nutritional benefit) and chop into four centimeter chunks.
  6. Peel the onions, seed the peppers, chop them into four centimeter chunks too, and add all the vegetables to the pan.
  7. Pick over half the parsley leaves, then pour over the chorizo broth and mix it all together.
  8. Cover tightly with aluminum foil, place over the stove on a high heat for two minutes, then pop into the oven.
  9. Bake for 30 minutes, then remove the foil, pull the chicken up to the top to get golden, and cook for another 30 minutes, or until bubbling and the chicken and vegetables are cooked through.
  10. Meanwhile, pick the rest of the parsley leaves onto a plate.
  11. Spoon the yogurt alongside and add a few pinches of cayenne next to it.
  12. Finely slice the chile and almonds and add to the plate, then finely grate over the lemon zest.
  13. When the traybake is ready, serve with the plate of garnishes alongside, letting everyone help themselves to yogurt and sprinkles.
