Pink grapefruit shortbread

Ingredients

  • 1 1/2 cups unsalted butter at room temperature
  • 1-1/4 cup sugar
  • 1 tablespoon grapefruit zest
  • 2 tablespoons pink grapefruit juice
  • 1 teaspoon vanilla extract
  • 3-1/2 cups all purpose flour
  • 1/2 teaspoon kosher salt

Glaze:

  • 2 cups icing sugar
  • 3 tablespoons pink grapefruit juice
  • 1-3 drops pink food colouring

Directions

  1. Pre heat your oven to 350°, and line two baking sheets with parchment paper and set aside.
  2. In the bowl of a stand mixer cream the butter, sugar, grapefruit zest, grapefruit juice and vanilla until well combined. Gradually add the flour and salt and mix until the dough starts to come together.
  3. Turn the dough out onto a cutting board and form it into two disks. Wrap in plastic wrap and chill in the fridge for 30-45 minutes.
  4. Once the dough is chilled, roll it out to one centimeter thick and use any cookie cutters your heart desires to cut out dough. Place cut out dough on prepared baking sheets and bake for 16 - 18 minutes.
  5. Once out of the oven let them cool on the baking sheet for a few minutes and then transfer them to a cooling rack to completely cool.
  6. Make the glaze by simply adding the pink grapefruit juice to the icing sugar, stirring to combine. Add a few drops of pink food colouring to achieve a nice pink hue.
  7. Decorate with sprinkles or coloured sugar and enjoy!
