Prideful cheesecake

It's Pride month, and there's no better way to celebrate than with a dessert that's absolutely exploding with colour. This cheesecake is topped with any fresh berry and fruit that your heart desires, along with edible flowers! Not only does it taste great, but it will look even better on your Instagram feed.

Food expert Jason Skrobar shares the recipe that anyone can make at home!

Ingredients

  • 2 cups graham cracker crumbs (about 14 sheets)
  • 2 tablespoons dark brown sugar
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted butter (1 stick), melted
  • 750 grams cream cheese (3 packages), softened
  • 1/2 cup granulated sugar
  • 1/4 cup greek yogurt
  • 1 teaspoon vanilla extract OR strawberry extract
  • 1 teaspoon lemon juice
  • 1 cup whipping cream, whipped to stiff peaks
  • 3 cups mixed fruit - berries, kiwi, cherries or any fruit you like
  • Fresh mint and edible flowers for garnish

Directions

  1. Pre-heat oven to 350°
  2. In a large mixing bowl toss graham cracker crumbs, brown sugar, kosher salt and melted butter until well combined. Place the graham cracker mixture into a 9” springform pan and press the mixture firmly to the bottom of the pan and up the sides. Use a one cup measuring cup or small glass to help pack the mixture into the pan.
  3. Place the springform pan in the pre-heated oven and bake for eight minutes. Remove from the oven and let cool completely.
  4. While the crust is cooling, make the filling. In the bowl of a stand mixture fitted with the paddle attachment, or in a large mixing bowl using electric beaters, beat softened cream cheese, sugar and yogurt until smooth and creamy - about three to four minutes. Add extract and lemon juice and beat for another ten seconds to incorporate. Switching to a rubber spatula, gently fold in the whipped cream.
  5. Pour the filling into the cooled crust and cover with plastic wrap. Chill in the fridge overnight to set.
  6. Once the cheesecake is fully set, add mixed fruit to the top and garnish with mint and edible flowers. Enjoy!
