Sweet onion, garlic and ginger in olive oil until softened (approximately seven minutes). Add remaining ingredients, bring to a boil then simmer for 45 minutes. Remove cinnamon stick and bay leaf. Can be done up to three days in advance.
Mix ingredients for dry rub together. Rub all over ribs. Cover tightly with foil and bake low and slow: 300 degrees for approximately three hours until fork tender. Then coat with sauce and place on the grill to caramelize. Ribs can be baked up to two days in advance and grilling upon serving.
