Ribs with orange chipotle BBQ sauce

Ingredients

  • 3-4 pounds ribs

Dry rub:

  • 2 teaspoons ground allspice
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground cinnamon
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground turmeric
  • 1 tablespoon cumin seeds
  • 1 tablespoon fennel seeds
  • 1 tablespoon chipotle powder

Orange chipotle BBQ sauce:

  • 1 tablespoon olive oil
  • 3 garlic cloves, finely chopped
  • 1 tablespoon ginger, finely chopped
  • 1/2 onion, finely diced
  • 1 teaspoon salt
  • 1 1/2 cup ketchup
  • 1/2 cup red wine vinegar
  • 1/2 cup orange juice
  • 2/3 cup brown sugar
  • 1 chipotle pepper, in adobo
  • 1 cinnamon stick
  • 1 bay leaf

Directions

  1. Sweet onion, garlic and ginger in olive oil until softened (approximately seven minutes). Add remaining ingredients, bring to a boil then simmer for 45 minutes. Remove cinnamon stick and bay leaf. Can be done up to three days in advance.
  2. Mix ingredients for dry rub together. Rub all over ribs. Cover tightly with foil and bake low and slow: 300 degrees for approximately three hours until fork tender. Then coat with sauce and place on the grill to caramelize. Ribs can be baked up to two days in advance and grilling upon serving.
