Roasted honey chicken breasts with roasted sweet potatoes and dates

  • 4 chicken breasts
  • 1 cloves garlic, chopped
  • 3 tablespoons soya sauce
  • 1/3 cup honey
  • 2 tablespoons olive oil
  • 1/4 cup water or chicken broth
  • Salt and pepper to taste


  • 3 sweet potatoes, chopped
  • 1 white onion, chopped
  • 14 large dates, pitted and chopped


  1. In a mixing bowl, stir together honey, water, soya sauce, olive oil and garlic to make a marinade.
  2. Line a large baking sheet with parchment paper and preheat oven to 350F degrees.
  3. Chop vegetables and line veggies + dates on the bottom of the baking sheet. Place chicken breasts in the center of the baking sheet. Add mixture on top of the vegetables and chicken. Season with salt + pepper on top.
  4. Place chicken and vegetables in the oven for 35-40 minutes or until chicken is cooked to your liking.
  5. Remove from oven. Serve and enjoy!
