Salted orange hot cocoa

Skim milk powder is the secret ingredient to this decadently rich hot chocolate. Plus, you skip the added fat from whipping cream to the drink – save that treat for the topping!

Ingredients
- 1/2 cup instant skim milk powder
- 1/4 cup good quality cocoa powder (regular or Dutch Process)
- 6 tablespoon sugar
- 1/2 teaspoon sea salt (Anna recommends Maldon flaked salt)
- 6 cups 2% milk
- 1 orange zest, finely grated
- 4 oz bittersweet chocolate, chopped
For the whipped cream topping:
- 1 cup whipping cream
- 1 tablespoon instant skim milk powder
- 1 tablespoon sugar
- 1 teaspoon orange zest, finely grated
- Pinch flaked sea salt (Maldon)
- Cocoa powder, for dusting
Directions
- Stir the skim milk powder, cocoa powder, sugar and salt together in a small dish.
- Whisk in one cup of the cold milk to blend.
- Add the remaining milk, plus the cocoa mixture, orange zest and chopped chocolate to a small pot and slowly bring it to a gentle simmer, stirring often.
- Once a simmering, whisk for one or two minutes more, to allow the skim milk powder to thicken.
- For the topping, whip the cream with the skim milk powder until the cream holds its shape when the beaters are lifted.
- Stir in the sugar and orange zest.
- Ladle the hot cocoa into mugs, top with the whipped cream and sprinkle with sea salt and cocoa powder.
