Ingredients
Two pounds large shrimp, peeled and deveined
Four cloves of garlic, finely minced
Three Roma Tomatoes, seeded and finely diced
Juice of one lemon
Half teaspoon dried oregano
One cup cubed feta
Half cup extra virgin olive oil
One quarter cup chopped flat leaf parsley
Crusty bread
Directions
Preheat oven to 425 degrees, and line sheet pan with aluminum foil.
In a bowl, toss together all ingredients except parsley. Pour onto sheet pan in one even layer and bake for 10-12 minutes, or until shrimp has just cooked through and cheese is bubbly.
Garnish with parsley, and serve alongside sliced crusty bread.
