In mason jar or sealable container, combine strawberries and sparkling wine or soda water. Close lid. Shake gently and place into refrigerator or freezer for 30 minutes.
Spoon strawberries onto whipped cream and meringue or angel food cake. Serve immediately! Pour strawberry-scented wine or soda water into champagne flutes to serve as an accompaniment or use in a Strawberry Gin Fizz (see recipe).
