Shuck and blanch corn ahead of cooking. Season corn with oil and salt and grill at high heat.
When ready pull off and place on a tray. Season with tajin and top with your chipotle crema. Add cheese and crumbs on top and Then cheese and crumbs and finish with a final topping of Tajin.
Chef's note: Add additional chillies and scallions for garnish.
Chipotle crema:
Add 1/4 of sour cream with all ingredients in a blender. Blend until smooth.
