Chipotle crema:

500 ml sour cream

25 grams smoked paprika

5 roasted garlic cloves

0.25 bunch of cilantro

100 ml lime juice

Zest of those limes

60 grams honey

3 chipotle peppers and sauce

20 grams kosher salt
Directions
Street corn:
- Shuck and blanch corn ahead of cooking. Season corn with oil and salt and grill at high heat.
- When ready pull off and place on a tray. Season with tajin and top with your chipotle crema. Add cheese and crumbs on top and Then cheese and crumbs and finish with a final topping of Tajin.
- Chef's note: Add additional chillies and scallions for garnish.
Chipotle crema:
- Add 1/4 of sour cream with all ingredients in a blender. Blend until smooth.
- Fold in the remaining sour cream.
