Quick and easy tacos

Taco Tuesday is everyone's favourite night! Made with ground chicken, orange bell peppers, and all your favourite toppings, cook this meal up when you're looking to feed a big group of people.

Ingredients

  • Drizzle of olive oil
  • 1 large onion, diced
  • 1 orange pepper, diced
  • 500g ground chicken
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups salsa
  • 2 cups guacamole
  • 2 cups iceberg lettuce
  • 2 cups Monterey jack cheese
  • 2 limes, sliced
  • 1/2 cup fresh cilantro leaves
  • 1 cup sour cream
  • 12 flour tortillas

Directions

  1. In a saute pan on medium-high warm with olive oil. Add the onions and peppers, and cook for four to five minutes.
  2. Add the ground chicken and season with cumin, salt and pepper. Stir and allow to cook for 15 to 17 minutes, or until the chicken is completely cooked. 
  3. In the meantime, prepare the bowls of salsa, guacamole, lettuce, cheese, limes, cilantro leaves and sour cream. Arrange the tortillas around the spread. 
  4. Remove the chicken from the pan and place it into a serving bowl. 
  5. To serve, have everyone build their own taco based on what they like! Enjoy!
