This tangy Caprese salad is the perfect addition to a grazing platter for your next camping trip! Made with ripe, juicy tomatoes, creamy mozzarella, fresh basil and a sweet and tangy pesto balsamic dressing for an extra punch of flavour in every bite.

Ingredients
Tangy Caprese Salad
- 1 tablespoon pesto
- ¼ cup balsamic vinegar
- 3-4 medium tomatoes, sliced
- 1 (8 oz) ball fresh mozzarella, sliced
- Fresh basil leaves to serve
- Extra-virgin olive oil, for drizzling
- Flaky sea salt and freshly ground black pepper to season
Directions
For the Balsamic Pesto Mix
- In a bowl, combine the pesto and balsamic vinegar. Set aside for serving.
Assemble the Salad
- Arrange the tomatoes, mozzarella, and basil leaves on a platter.
- Drizzle with olive oil, sprinkle with sea salt and freshly ground black pepper.
- Dollop with the balsamic pesto mix. Serve with your choice of bread, olives, nuts, etc. Enjoy!
