Add greens to any meal with this farm-fresh salad.

Ingredients
1 pound peas
1 head butter lettuce
1 tablespoon butter
1/2 red onion, minced
2 tablespoons red wine vinegar
1/3 cup canola oil
1 1/2 teaspoons maple syrup
1/2 cup shaved parmesan
Salt and black pepper, to season
Directions
In a saute pan on medium heat, melt the butter, add the peas and saute for three minutes just to heat through.
In a small bowl, whisk the onion, vinegar, canola oil, and maple syrup. Season with salt and pepper.
On a plate, arrange lettuce leaves and spoon over the prepared dressing and top with warmed peas. Garnish with parmesan shavings.
