Tangy green pea salad

Add greens to any meal with this farm-fresh salad.

Ingredients
- 1 pound peas
- 1 head butter lettuce
- 1 tablespoon butter
- 1/2 red onion, minced
- 2 tablespoons red wine vinegar
- 1/3 cup canola oil
- 1 1/2 teaspoons maple syrup
- 1/2 cup shaved parmesan
- Salt and black pepper, to season
Directions
- In a saute pan on medium heat, melt the butter, add the peas and saute for three minutes just to heat through.
- In a small bowl, whisk the onion, vinegar, canola oil, and maple syrup. Season with salt and pepper.
- On a plate, arrange lettuce leaves and spoon over the prepared dressing and top with warmed peas. Garnish with parmesan shavings. Enjoy!
