Tangy green pea salad


  • 1 pound peas
  • 1 head butter lettuce
  • 1 tablespoon butter
  • 1/2 red onion, minced
  • 2 tablespoons red wine vinegar
  • 1/3 cup canola oil
  • 1 1/2 teaspoons maple syrup
  • 1/2 cup shaved parmesan
  • Salt and black pepper, to season


  1. In a saute pan on medium heat, melt the butter, add the peas and saute for three minutes just to heat through.
  2. In a small bowl, whisk the onion, vinegar, canola oil, and maple syrup. Season with salt and pepper. 
  3. On a plate, arrange lettuce leaves and spoon over the prepared dressing and top with warmed peas. Garnish with parmesan shavings. Enjoy!
