Vijaya's one-pot pizza pasta

Everyone loves pizza, but switching things up and turning into pasta is a fool-proof way to get your family to the dinner table.

Ingredients

  • 2 tablespoons olive oil
  • 6 slices bacon, chopped into small pieces
  • 2 cloves garlic, minced
  • 1/2 teaspoon crushed red chili flakes
  • 3.5 cups strained tomato sauce
  • 1 tablespoon dried oregano
  • Salt to taste
  • 2 cups water
  • 2 and 1/4 cups penne pasta
  • 1 green pepper, thinly sliced
  • 1 cup mushrooms, thinly sliced
  • 1 cup turkey pepperoni
  • 1/2 cup chopped pineapple
  • 1/2 cup sliced green olives
  • 2 cups shredded mozzarella cheese

Directions

  1. Heat oil in a dutch oven on medium-high heat. Add bacon, and cook until crispy and golden, followed by garlic and chili flakes. Fry for 10-15 seconds, or until garlic is fragrant. Add tomato sauce, oregano, and salt and simmer for five minutes.
  2. Once the sauce has simmered, add the water and bring to a boil. Add pasta, and cook for 12 minutes on medium heat, stirring occasionally.
  3. Then add green pepper, mushrooms, pepperoni, pineapple, and green olives to the pot, reserving a little bit of each ingredient for garnish. Cook for an additional three to four minutes until pasta is tender, and vegetables are warmed through.
  4. Remove from heat, and stir in 3/4 cup of the mozzarella. Cover the surface of the pasta with the remaining mozzarella, and garnish with the reserved ingredients as you would a pizza. Cover with a lid and allow to sit until cheese has melted.
  5. Enjoy!
