Windowsill Caesar cocktail

Inspired by the West Coast, this Caesar cocktail is made with flavours of lemon, dill and jalapeño.

Ingredients

Rim

  • 2 tablespoons celery salt
  • 1 lemon wedge

Cocktail

  • 6 to 8 turns cracked black pepper
  • Small handful celery leaves
  • Small handful fresh dill
  • 2 to 3 slices cucumber, cut into 1/4 inch/6mm thick)
  • 3 to 4 slices fresh jalapeño, sliced into 1/8-inch(3mm) rounds, seeds removed for less heat
  • 2 lemon wedges
  • 1 1/2 oz (45ml) vodka
  • 5oz (150ml) Caesar mix, mild

Directions

Rim 

  1. Pour the celery salt onto a small plate. Circle the rim of your glass with the lemon wedge, then roll the rim in the celery salt.

Cocktail 

  1. Place the pepper in a cocktail shaker (or another mixing vessel). Next, layer in the celery leaves, dill, cucumber, and jalapeño (or whatever herbs and veggies you have on your window sill). Finally, put the lemon wedges on top. 
  2. Using a muddler, muddle everything together. Don’t over-muddle. You want to extract the flavours and oils from the herbs, veggies, and citrus juice and peel, but you don’t want to completely shred everything and emulsify the mixture. If you overdo it, the mixture will lose its bright crisp flavours and taste like soggy greens.
  3. Pour the vodka and Caesar mix into the shaker. Fill the shaker with ice to just above the top of the liquid and stir with a bar spoon until the outside of the shaker is very cold to touch.
  4. Fill the rimmed glass three-quarters full with fresh cube dice. Strain the contents of the shaker into the glass and top with additional ice if desired. Garnish with the skewer and fresh herbs. Enjoy!
