Ingredients
450g skinless salmon fillet
Toasted sesame oil
¼ cup hoisin sauce
1–2 tablespoons sriracha
2 tablespoons sesame seeds
2–3 large handfuls baby bok choy, halved
3 tablespoons soy sauce, divided
250g soba noodles
2 green onions, thinly sliced
Directions
Arrange your oven rack to the top position and heat your broiler to high. Bring a large pot of water to a boil over high heat.
Slice the salmon fillet into 1cm thick strips and place onto a sheet pan. Drizzle with a little sesame oil and flip to coat both sides of the salmon with the oil. Arrange the salmon so that there is a little room between each piece.
In a small bowl, stir together the hoisin sauce and sriracha then divide over the salmon then brush to coat the top of each piece. Broil the salmon for 8 minutes or until caramelized and cooked through to your liking.
Meanwhile, place a large sauté pan over medium heat and add in the sesame seeds. Toast, stirring frequently, just until golden and nutty smelling. Transfer the seeds to a small bowl and add in a splash of sesame oil along with the baby bok choy. Add on a lid and cook for 1 to 2 minutes or until slightly wilted and golden brown. Add in 2 tablespoons of soy sauce and remove from the heat.
Add the soba noodles to the water and cook according to the package directions. Drain and rinse with cold water then transfer to a large bowl. Add about a tablespoon of sesame oil to the noodles along with 1 tablespoon of soy sauce and toss well to combine.
Divide the noodles into four serving bowls and add in the bok choy. Top with the salmon, the toasted sesame seeds, and a scattering of green onion.
