Ingredients

  • 2 ripe bananas (7 oz total)
  • 1 lb frozen fruit
  • 2 cups plain yogurt or crème fraîche
  • 2 tablespoons elderflower cordial

Directions

  1. Peel, slice and freeze the bananas, ideally in advance.
  2. In a food processor, pulse the bananas with your chosen frozen fruit, the plain yogurt or crème fraîche and elderflower cordial until smooth, stopping halfway to scrape down the sides with a spatula and help it along.
  3. Portion up what you want to eat now into bowls or cones, then freeze the rest in a suitable container.
  4. If leaving it overnight or longer, once you’re ready to serve, move it from the freezer to the fridge to gently thaw before tucking in.
