Ingredients

  • ---FOR THE SAUCE---
  • ½ cup mayonnaise
  • 3 tablespoons ketchup
  • 2 tablespoons relish
  • 1 teaspoon yellow mustard
  • 1 teaspoon white vinegar
  • ½–1 teaspoon sugar
  • ---FOR THE BURGERS---
  • 454g lean ground beef
  • Salt & pepper
  • Canola oil
  • ½ small yellow onion, finely diced
  • 2–3 tablespoons yellow mustard
  • 4 slices medium cheddar cheese
  • ---FOR SERVING---
  • 2–4 burger buns
  • 1 ½ cups finely shredded iceberg lettuce
  • 8–16 pickle chips
  • 2–4 slices tomato
  • Crinkle cut fries, cooking according to package directions

Directions

  1. In a medium bowl, prepare the sauce by whisking together the mayonnaise, ketchup, relish, mustard, and vinegar and season to taste with sugar. Set aside.
  2. For the burgers, heat a large cast iron skillet over high heat. Divide the beef into four equal portions and shape each into a ball. Season well with salt and pepper. Add a small splash of oil to the pan and add in the beef. Lightly press the burgers down with a spatula to flatten slightly then scatter the top of each with some onion. Firmly press the burgers down until quite flat and cook for 3 to 4 minutes or until well seared.
  3. Flip the burgers over and brush with mustard. Cook for 1 to 2 minutes then flip and brush the other side with mustard. Flip the burgers again, top each with a slice of cheese, remove the pan from the heat, and cover with a lid to allow the cheese to melt. Once melted, set the burgers aside to rest for a minute or two while you prepare the buns and toppings.
  4. Toast the buns, if desired, and toss the lettuce with a few tablespoons of the prepared sauce. Add the lettuce to the bottom buns, top with a patty or two, and garnish with pickles and tomato. Serve the burgers with crinkle cut fries and the remaining sauce on the side for dunking.
