Ingredients
- 4 slices Angel Food Cake
- 1/2 pineapple, diced
- 1 lime, juiced and zested
- 2 tsp rum, optional
- 1 tbsp sugar
- 1 cup whipping cream
- 1/4 cup sugar
- 1 tbsp vanilla bean paste
- pinch of salt
- 1/4 tsp coconut extract
- Fresh mint, chiffonade for garnish
Directions
- Combine the pineapple, lime juice and zest, rum (if using), and sugar in a bowl.
- Mix well and let sit to macerate for 30 minutes.
- Whip the cream, sugar, vanilla, salt, and coconut extract together until stiff peaks are formed.
- Set aside.
- Air fry the angel food cake slices at 350 degrees for 3-4 minutes, or until golden brown and crispy on the edges.
- Top each slice with some of the whipped cream, followed by some of the macerated pineapple
- Garnish with fresh mint and enjoy!
