Ingredients

  • 4 slices Angel Food Cake
  • 1/2 pineapple, diced
  • 1 lime, juiced and zested
  • 2 tsp rum, optional
  • 1 tbsp sugar
  • 1 cup whipping cream
  • 1/4 cup sugar
  • 1 tbsp vanilla bean paste
  • pinch of salt
  • 1/4 tsp coconut extract
  • Fresh mint, chiffonade for garnish

Directions

  1. Combine the pineapple, lime juice and zest, rum (if using), and sugar in a bowl. 
  2. Mix well and let sit to macerate for 30 minutes.
  3. Whip the cream, sugar, vanilla, salt, and coconut extract together until stiff peaks are formed.
  4. Set aside.
  5. Air fry the angel food cake slices at 350 degrees for 3-4 minutes, or until golden brown and crispy on the edges.
  6. Top each slice with some of the whipped cream, followed by some of the macerated pineapple
  7. Garnish with fresh mint and enjoy!
