Ingredients

  • 12 small yellow onions
  • Salt & pepper (1 tsp salt, pinch pepper)
  • Pinch freshly grated nutmeg
  • 2 teaspoons finely chopped sage or thyme
  • 1–1 ½ cups whipping cream
  • 1 ½ cups grated Gruyere, Swiss, or extra old cheddar cheese

Directions

  1. Heat your oven to 375ºF and grease a large casserole dish with butter or non-stick cooking spray. Set a large pot of water to boil.
  2. Trim and peel the onions, leaving as much of the root end intact as possible.
  3. Season the water well with salt and boil the onions for 10 to 15 minutes or until a knife can easily pierce through to the centre. Remove the onions from the water and halve or quarter through the root.
  4. Arrange the onions cut side up in the prepared casserole dish and season with about a teaspoon of salt and a pinch of pepper and nutmeg. Scatter over the herbs, pour over the cream, and scatter with the cheese.
  5. Bake the onions for 30 minutes or until bubbling and the cheese is golden brown.
