Ingredients
- ---FOR THE BEEF RIBS---
- 2 lbs Kalbi Beef Ribs
- 2 tsp baking soda
- 1 tsp salt
- ⅔ cp water
- ---FOR THE MARINADE---
- 4 tbsp fish sauce
- 2 tbsp sugar (palm sugar or brown sugar)
- 2 tbsp rice vinegar
- 3 tbsp water
- 1 lime, zest & juice
- 2 shallots, thinly sliced
- 3 cloves garlic, minced
- 1 small handful fresh herbs (mint, cilantro, Thai basil)
Directions
- In a mixing bowl, mix baking soda, salt, and water. Add the beef ribs to tenderize for 15 minutes.
- Remove from the bowl, rinse the ribs and pat dry.
- In a large mixing bowl, combine all marinade ingredients. Stir until the sugar dissolves.
- Grill beef ribs until deeply caramelized and cooked to your desired doneness.
- Remove from the grill and immediately add to the marinade.
- Serve with vermicelli noodles, herbs, pickled carrots & daikon, and bean sprouts.
Note: Kalbi ribs will cook very quickly, approximately 1.5 to 3 mins total cooking, depending on the temperature of the grill and thickness of the beef ribs. The baking soda tenderizing will make the ribs ultra forgiving, and ensure they are soft and tender; not rubbery.
