Ingredients

  • 1/2 loaf brioche, diced into 1/2” cubes
  • 2 tbsp olive oil
  • 1/2 white onion, diced
  • 1 celery stalk, diced
  • 2 cloves garlic, finely minced
  • 1/2 red apple, diced
  • ½ bunch sage, finely chopped
  • ½ bunch thyme, finely chopped
  • 1/2 cup chestnuts, roasted and chopped
  • ½ bunch parsley, finely chopped
  • 1 cups chicken stock
  • 2 eggs, scrambled
  • ½ cup butter, melted

Directions

  1. In a large skillet, heat the olive oil over medium low.
  2. Add the onions, celery, garlic, apple, sage, thyme, and salt and pepper to taste. 
  3. Cook, stirring frequently, for 6-8 minutes or until softened.
  4. Take off the heat and allow to cool. In a large mixing bowl, combine the brioche, chestnuts, parsley, stock, eggs, butter, and cooled mixture.
  5. Mix well to combine then transfer to your baking dish or small cast iron pan.
  6. Cover and bake in a 350-degree oven for 30-35 minutes.
  7. Uncover and bake for an additional 25-30 minutes, or until the top and edges are golden brown. Enjoy!
