Ingredients
- 1/2 loaf brioche, diced into 1/2” cubes
- 2 tbsp olive oil
- 1/2 white onion, diced
- 1 celery stalk, diced
- 2 cloves garlic, finely minced
- 1/2 red apple, diced
- ½ bunch sage, finely chopped
- ½ bunch thyme, finely chopped
- 1/2 cup chestnuts, roasted and chopped
- ½ bunch parsley, finely chopped
- 1 cups chicken stock
- 2 eggs, scrambled
- ½ cup butter, melted
Directions
- In a large skillet, heat the olive oil over medium low.
- Add the onions, celery, garlic, apple, sage, thyme, and salt and pepper to taste.
- Cook, stirring frequently, for 6-8 minutes or until softened.
- Take off the heat and allow to cool. In a large mixing bowl, combine the brioche, chestnuts, parsley, stock, eggs, butter, and cooled mixture.
- Mix well to combine then transfer to your baking dish or small cast iron pan.
- Cover and bake in a 350-degree oven for 30-35 minutes.
- Uncover and bake for an additional 25-30 minutes, or until the top and edges are golden brown. Enjoy!
