Ingredients

  • ½ cup butter, room temperature
  • 1 cup grated extra old cheddar cheese
  • 1 teaspoon chipotle chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 ¼ cups all-purpose flour

Directions

  1. Beat the butter, cheddar, chili powder, salt, and pepper together by hand or using a hand mixer. Add in the flour and mix on low just until a crumbly dough is formed that holds together when squeezed in your hand. If the dough is a little dry, add a teaspoon or milk or water.
  2. Press the dough into a ball then roll into an 8-inch log and wrap with plastic. Place in the refrigerator for at least 1 hour or up to 4 days. Alternatively, freeze the dough for up to 3 months.
  3. When ready to bake, heat your oven to 350ºF and line a large sheet pan with parchment paper. Slice the log into approximately ¼-inch thick rounds and bake for 15 to 18 minutes or until lightly golden brown and crisp.
  4. Cool completely and serve at room temperature.
