Chocolate Freezer Cake

Ingredients

  • ---FOR THE CAKE---
  • 1 cup milk
  • 1 tbsp white vinegar
  • 2 large eggs
  • ⅔ cup canola oil
  • 1 tsp vanilla extract
  • 2 cups all purpose flour
  • 1 ¾ cups sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • ½ cup unsweetened cocoa powder
  • 2 tsp instant coffee
  • ½ cup boiling water
  • ---FOR THE FROSTING---
  • 1 package instant chocolate pudding mix (113 g)
  • ¼ cup powdered sugar
  • 1 cup milk
  • 100 g dark chocolate (70%), roughly chopped
  • 1 ½ cups frozen whipped topping, thawed
  • ---FOR GARNISH---
  • Chocolate sprinkles

Directions

  1. Preheat the oven to 350 degrees F. Butter and line a 9x13 baking pan with parchment paper.
  2. To a medium bowl add the milk and vinegar. Mix well and let it sit for 10 minutes. Then add the eggs, oil, and vanilla. Whisk until well mixed.
  3. To a large bowl add the flour, sugar, baking powder, baking soda, and salt. Whisk together. Pour in the wet ingredients, and gently whisk until combined.
  4. Add the cocoa powder, and instant coffee to a small bowl. Top with the boiling water, and whisk until smooth.
  5. Pour the cocoa mixture into the batter, and fold until no streaks of white can be seen.
  6. Pour the batter into the prepared pan, and bake in the centre of the oven for 30-35 minutes or until a toothpick inserted in the middle comes out with a few crumbs.
  7. Cool for 15 minutes in the pan, then invert onto a wire rack to cool completely.
  8. To make the frosting, place the pudding mix and powdered sugar in a medium bowl and add the milk. Whisk for 2 minutes until smooth, and let rest for 5 minutes to thicken.
  9. Place the chopped chocolate in a heat proof bowl and place over a small pot of simmering water. Gently melt the chocolate, stirring often with a spatula.
  10. Transfer the melted chocolate to the pudding, and mix well.
  11. Add ½ cup of the thawed whipped topping to the pudding, and mix well. Then add the remaining 1 cup of whipped topping, and mix until no streaks of white can be seen.
  12. Chill the frosting, then transfer to a piping bag with a star tip.
  13. Decorate the top of the cake with rows of icing stars until completely covered.
  14. Cut into square slices to serve.
