Melt chocolate with butter in a double boiler or, in the microwave, by intervals of 30 seconds. Constantly stir and remove from the double boiler as soon as the chocolate and the butter are melted.
In a separate bowl, whisk together eggs and sugar until you get a homogenous mix then add the flour (sifted).
Add the melted chocolate in the bowl and whisk well. Grease your ramekin with cooking spray. Fill the ramekins with your batter. Then bake.
Baking times depends on how your oven and how liquid you want your lava cake to be (see baking times below). I prefer them when they are super liquid and oozing with chocolate (10-11) minutes. The outside of the cake should be baked and the middle still jiggly when you are done.
Super liquid: 10-11 minutes
Medium liquid: 12 minutes
Melting: 13 minutes
Well baked: 14 minutes
Let the lava cake cool down for 5-10 minutes. Use a small knife to unstick the cake from the ramekin. Removing the cake from the ramekin by flipping it on a plate (use a towel to not burn yourself).
