Ingredients

  • 2 cups Sugar
  • 1 cup Light Corn Syrup
  • 1/2 cup Water
  • 2 cups Pumpkin Seeds
  • 2 tablespoons Butter
  • 1 1/2 teaspoons Baking Soda
  • 1 1/2 teaspoons Vanilla
  • Flaky Sea Salt (Optional)
  • 6 Oz Dark Chocolate Chips

Directions

  1. Cook Water, Sugar and Corn Syrup to around 250F.
  2. Next add the Pumpkin seeds and continue cooking until reaching 300F.
  3. Add the remaining ingredients and stir well for 5-10 seconds before pouring out onto a parchment sheet to let cool.
  4. While the brittle cools temper your Dark Chocolate by melting about 4 ounces of it in a microwave in 10-30 sec bursts. When fully melted add the remaining 2 ounces of chocolate and keep stirring until it is completely melted. If the chocolate is not completely melting microwave in additional 5 second bursts and stirring in between until fully melted.
  5. Spread this chocolate mixture over the brittle and finish with flaky sea salt.
