Ingredients

  • 3 tablespoons room temperature butter, divided
  • 2 thick slices of meatloaf
  • 4 slices thick cut sandwich bread
  • 2 slices cheddar cheese
  • Mayonnaise, ketchup, or whatever sauces or toppings you’d like

Directions

  1. Place a non-stick skillet over medium-high heat and add in 1 tablespoon of butter. Add in the meatloaf slices, cut side down, and fry until lightly golden on both sides. Set aside.
  2. Wipe out the pan and spread the remaining butter over one side of each slice of bread. Fry the bread, butter side down, in the pan until golden.
  3. Build the sandwiches with the griddled side of the bread on the outside with cheese and whatever sauces or toppings you’d like.
