Ingredients

  • 1/2 cup brown butter, cooled
  • 3/4 cup brown sugar
  • 1 egg
  • 5 dates, soaked in boiling water for 10 minutes
  • 2 tsp vanilla bean paste
  • 1/2 tsp cocoa powder
  • 3 tbsp yellow raisins
  • 3 tbsp glace fruit mix with peel
  • 2 tbsp rum
  • 1/4 cup water
  • 1 1/3 cup + 1 tbsp AP flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/8 tsp allspice
  • 1/8 tsp clove
  • 1/3 cup white chocolate chips
  • 1/2 cup cherries, in syrup
  • Maldon salt, for sprinkling
  • Powdered sugar, for dusting

Directions

  1. In a large mixing bowl, mix the brown butter and sugar together just until combined. In a small blender, blitz the egg and dates together then add to the bowl. Add the vanilla bean pate and cocoa powder and mix just to combine.
  2. In a separate bowl, combine the raisins, glace fruit mix, rum, and water. Microwave for 30 seconds then let sit for 5 minutes. Drain and add to the bowl.
  3. In a separate bowl, combine the AP flour, baking soda, cinnamon, salt, allspice, and clove. Mix well then add to the bowl along with the white chocolate chips.
  4. Mix well to combine then chill the mixture in the fridge for 20 minutes. Preheat the oven to 350 degrees. Scoop out approximately 1/4 cup of the cookie dough for each cookie.
  5. Round into balls, then flatten slightly with your hand. Top each cookie with soaked cherries and a sprinkling of maldon salt. Bake for 10 minutes, remove and cool. Dust with powdered sugar, then add to your cookie tin!
