Ingredients
----For the Gojuchang Salmon----
2 tbsp gojuchang
2 tbsp soy sauce
2 tbsp mirin
½ tbsp sesame oil
2 cloves garlic, finely grated
Kosher salt to taste.
4 individually portioned salmon filets (approximately 4 to 6 oz per piece)
----For the Fried Rice----
4 cups cooked rice (preferably jasmine)
¼ cup frozen peas
¼ cup finely chopped red pepper
2 green onions, thinly sliced
½ tbsp sesame oil
2 tsp powdered chicken bouillon
1 tsp light soy sauce
Kosher salt to taste
1 tbsp canola oil
----For the Garlic Green Beans----
1 lb french green beans, trimmed at both ends
1 tbsp melted butter
1 tbsp sesame oil
3 cloves garlic, finely minced
Kosher salt to taste
Directions
For the Gojuchang Salmon
To a large bowl add the gojuchang, soy sauce, mirin, sesame oil, garlic, and salt to taste. Whisk to combine.
Then add the salmon filets, and mix to coat in the marinade.
Arrange in one even layer in a freezer bag, and place in the freezer.
Prior to baking, thaw the marinated salmon. Preheat the oven to 425 degrees Fahrenheit.
Remove the salmon from the bag, discarding any leftover marinade. Place the pieces on a lined baking tray, and bake for 15 minutes.
For the Fried Rice
To a large bowl, add the cooked rice, frozen peas, red pepper, and green onions. Mix well.
To a small bowl, add the sesame oil, chicken bouillon, soy sauce, and salt to taste. Whisk together.
Pour the sauce over the rice, and mix well to coat.
Transfer the rice to a freezer safe bag, spread into one even layer, and freeze.
Heat a wok on medium heat. Add the oil, then once hot, add the rice. Cook for 3-4 minutes or until the rice heats through, and the vegetables have cooked through.
For the Garlic Green Beans
Bring a large pot of water to a rolling boil. Add the green beans, and cook until tender but still crisp. Drain.
Place the beans in a large bowl, and pour over the melted butter, and sesame oil. Then add the garlic, and season with salt to taste. Toss well to combine.
Transfer the beans to a freezer bag and spread into one even layer. Seal, and freeze.
Prior to cooking, thaw the green beans.
Place a large frying pan or wok on high heat. Add the green beans, and saute for 3-4 minutes or until piping hot and fragrant.
To Plate
Arrange the salmon on a plate with the fried rice, green beans, and store-bought kimchi.
